 Food Safety - Microbial Testing

Food safety is of critical importance at every phase of the operation. At HRR Enterprises a plant specific HACCP program monitors proper manufacturing procedures for the production of all products.  All products produced at the HRR facility are made from raw product derived from official establishments regulated by USDA/FSIS. These suppliers must meet HRR's rigid raw ingredient specifications and have validated critical control points (CCPs) in place for pathogen elimination or reduction.  In addition, HRR has a microbial testing program at every step of production to monitor the integrity and safety of our finished products including but not limited to: pre-operational testing, raw material micro testing, in-process product and finished product micro testing. Micro testing encompasses analyzing product for the traditional bacterial evaluated by the food industry including E coli 0157:H7. HRR's processing controls are under constant surveillance to assure compliance with established standards.

Regarding Bovine Spongiform Encephalopathy (BSE), HRR uses only FSIS/USDA inspected beef trimmings and beef fats with visible lean to produce products.  These raw ingredients do not come into HRR's facility with any specified risk material.  Cuts include "all beef" fats from the outside of the carcass. The raw trimmings and fat would include cuts from the brisket, round, loin and rib area.  HRR has purchasing specifications that ensure our suppliers are compliant with all Federal Register rules.  Raw material is purchased only from suppliers who:

-       prohibit the slaughter of non-ambulatory disabled cattle.

-       prohibit the use of specified risk material (SRMs). These suppliers have procedures in place for the removal, segregation and disposition of SRMs to ensure there is no cross contamination with edible product.

-       do not slaughter with air-injected stunners.

  HRR does not use any product obtained by means of mechanical separation of any kind or derived from Advanced Meat Recovery (AMR) systems.  Additionally, HRR suppliers certify that their product is derived from cattle that have been handled in compliance with CFR 21 Part 589.2000 regarding the feeding of mammalian-derived meat and bone meal.  All animals have been slaughtered under USDA/FSIS inspection which includes having a veterinarian on site during slaughter to inspect suspect animals.
