The Process
HRR's manufacturing process starts with
fresh beef trimmings and beef fats with visible lean from the
most reputable U.S. slaughterers of cattle and packers of beef. These establishments also meet HRR's rigid raw material
specifications and are selected because of their integrity and
their compliance with all applicable USDA/FSIS rules and regulations.
Once the raw materials have been received and accepted, they
undergo further inspection by trained HRR employees to ensure
the materials are acceptable for processing. The raw meat is
ground and desinewed. The lean meat is extracted through a low
temperature processing system and is IQF (instantly quick frozen)
on a specially designed freezing system to zero to minus 10º. Finally
the product is chipped, packaged and passed
through a metal detection system.
